Cooking an entire meal on a baking sheet is a great way prepare dinner without all the mess. It cuts down on dishes and ensures everything is hot and ready to serve at the same time. The most comforting part of the day is coming home to family, being able to put dinner in the oven and catch up about our day.
To make this recipe, you’ll want to shop at Walmart® where Wright® Brand Bacon is a great value and you’ll be able to get chicken, fresh thyme and baby red potatoes for this recipe.
I always soak my toothpicks in a cup before baking with them and I’ve never had an issue with them charring.
Preheat oven 400 degrees F. Wrap bacon around chicken and pin it with a toothpick at both ends to hold the bacon down. Place on jelly roll pan with sides. Wash potatoes and prick the skin then just dab a little olive oil on the skin and place on the sheet around the chicken. Chicken can be seasoned before or after the bacon is wrapped around and I usually just add some chicken seasoning or pepper. Add a few fresh springs of thyme before placing in the oven.

Ingredients
- 6 chicken drumsticks
- 6 slices Naturally Hickory Smoked Wright Brand® Bacon
- 1 bag baby red potatoes
- Fresh thyme
- Pepper to taste
- 12 toothpicks
Instructions
Preheat oven to 400°F.
Soak about 12 toothpicks in water for at least 5 minutes.
Rinse chicken drums and pat dry with paper towel.
Rinse potatoes and prick with fork then dab them with a little olive oil.
Get out a jelly roll pan with tall sides or a baking dish. Wrap one piece of bacon around chicken drumstick and secure it at the front and back with a toothpick for each.
Place on baking pan and spread potatoes in area to fill space.
Season chicken with any baking spices then top with fresh thyme springs.
Bake in oven for 50 minutes or until chicken reaches internal temperature of 165°F.

Can this be done with BLSL chicken breasts? How should I modify?

Yes, it can be done with boneless skinless chicken breasts. Depending on how big the chicken breasts are, i’d wrap maybe 2 pieces of bacon around it. Slightly stretch the bacon and pin it with wet pre-soaked toothpicks. Also, bake uncovered until bacon is crispy then cover with foil. Bake chicken at normal temp you usually do.
