For Corn Methi Pulao
1/2 cup sweet corn kernels (makai ke dane)
3/4 cup chopped fenugreek leaves (methi)
1 cup long grain rice (basmati chawal) , washed and drained
1 tbsp butter
1 tbsp oil
2 to 4 whole black peppercorns (kalimirch)
1 small stick cinnamon (dalchini)
2 cloves (laung / lavang)
2 cardamoms (elaichi)
1/2 cup sliced onions
salt to taste
1/4 tsp turmeric powder (haldi)
1/2 tsp finely chopped green chillies

- To make corn methi pulao, heat 1 tbspbutter in a pressure cooker.
- Add 1 tbsp oil.
- Add 2 to 4wholeblack peppercorns (kalimirch).
- Add 1small stickcinnamon (dalchini).
- Add 2cloves (laung / lavang).
- Add 2cardamoms (elaichi).
- Sauté on a medium flame for ½ a minute.
- Add 1/2 cupsliced onions.
- Sauté on a medium flame for 1 to 2 minutes.
- Add 3/4 cupchopped fenugreek leaves (methi)leaves.
- Add 1/2 cupsweet corn kernels (makai ke dane).
- Sauté on a medium flame for 1 minute.
- Add 1 cuplong grain rice (basmati chawal), washed and drained.
- Add 2 cups of hot water.
- Add salt.
- Add 1/4 tspturmeric powder (haldi).
- Add 1/2 tspfinelychopped green chillies. You can also use green chilli paste.
- Sauté on a medium flame for a few seconds.
- Close lid and pressure cook for 2 whistles.
- Allow the steam to escape before opening the lid.
- Serve corn methi pulao hot with fresh curds.
