Need an easy dinner idea that can be on the table in roughly 35 minutes? My simple pork carnitas tostadas recipe will be your new go to dinner. It’s easy, delicious and the whole family will enjoy it.
Ever since coming home from Cabo, I’ve been on a big Mexican food kick. Good thing my whole family approves of it. Even my father in law’s new Russian girlfriend is a fan of my newfound love for Mexican cooking.
My favorite thing about cooking Mexican food is that the simple ingredients perfectly meldtogether to make mouthwatering combinations. I’m completely obsessed with making fresh pico de gallo and guacamole. The problem is that it can be time consuming and I don’t have enough time to make these fresh dishes and the rest of the meal from scratch every night.
My Secret Carnitas Weapon
Since my two boys are still young enough to need my attention during dinner time, I can’t spend much more than 30-40 minutes prepping dinner. That’s why I’malways looking for easy ways to put dinner on the table quickly. Lucky for me,Smithfield® just launched a new flavor of marinated fresh pork at Walmart. They now makeSmithfield Marinated Boneless Pork Shoulder Seasoned Carnitas. The best part is that there are no artificial ingredients. It’s exactly the same ingredients I’d use if I created a rub at home.
The entire pork shoulder roasts in the oven for 30 minutes and then you are ready to put together the tostadas.
Assemble the tostadas
I do “taco Tuesday” almost every week. As much as I love tacos, I like to mix it up with taco salad, quesadillas, burritos and tostadas. I especially love tostada night because it’s so easy!
I layer on some cabbage, the meat, then my freshly made guacamole and pico de gallo (recipe for both coming soon).
Of course you don’t have to make your own toppings! Have fun with it. Buy some already made guacamole and salsa, pile on some cheese, and play with different combinations. That’s the beauty of the tostada- anything goes!
Easy Dinner Idea: Pork Carnitas Tostadas Recipe
Cook Time: 30 minutes
Total Time: 30 minutes
Yield: 4
Serving Size: 2
Ingredients
- Smithfield Marinated Boneless Pork Shoulder Seasoned Carnitas
- 8 tostadas
- 1 C. shredded cabbage
- 1/2 C. of guacamole
- 1 C. pico de gallo
Instructions
- Preheat oven to 400 degrees.
- Cut the carnitas into 2 inch slices for a quicker roast time
- Place carnitas on a roasting rack and roast for 30 minutes or until the internal temperature reaches 160 degrees.
- Let cool for 5 minutes and shred with 2 forks.
- Layer cabbage, carnitas, guacamole and pico de gallo on the tostada.

Enough for leftovers
My recipe makes enough for 4 people to eat dinner and have plenty of leftovers.
We eat our carnitas the next day over chopped salad or my favorite corn salad.
No matter how you enjoy your leftovers, they will be enjoyable! Even my 4 year old likes them the next day.
Make sure to pick upSmithfield Marinated Boneless Pork Shoulder Seasoned Carnitas next time you are in Walmart. I found them in the pork section of the meat department.
This is my favorite inexpensive way to feed my family and guests, while still keeping some leftovers for the rest of the week.
