Ingredients for Roasted Potatoes

Ina Garten's Garlic Roasted Potatoes - Recipe Diaries (2)

Small Potatoes - red or white baby potatoes, make sure they are all the same size for even cooking.

Olive Oil - Look for olive oils that are labeled as extra virgin, cold-pressed, and unfiltered for the highest quality.

Salt - Ina likes to use a lot of salt in her recipes. If you don’t like that much salt, half the amount used.

Black Pepper - Freshly cracked pepper is always best

Garlic - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar.Sometimes garlic burns easily at high temperatures so use garlic powder instead.

Parsley - Chop some fresh parsley

See the recipe card below for a full list of ingredients and measurements. Apologies for the parsley spill. 🙂

What to serve with Roasted Potatoes?

There are many options for what to serve with roasted potatoes. Some popular choices include roasted or grilled meats such as Ina Garten's Perfect Roasted Chicken, beef, or pork, as well as vegetables like green beans, carrots, or Air Fyer Brussels sprouts with Bacon.

Some Crock Pot Turkey Chili would be great with these roasted potatoes as well.

You could also pair roasted potatoes with a salad or a side of rice or quinoa. For a more casual meal, you might serve them with burgers or hot dogs.

Recipe FAQs

Is it best to boil potatoes before baking

Boiling potatoes before baking can help to shorten the overall cooking time and ensure that they cook evenly. However, it depends on the recipe and personal preference. Some recipes may call for baking potatoes without boiling them first, while others may require boiling them beforehand. Ultimately, it's up to the individual to decide what method works best for their desired outcome.

What potatoes are best for roasting?

The best type of potatoes for roasting are usually those with a higher starch content, such as Russet or Yukon Gold potatoes. These varieties have a fluffy interior that becomes crispy on the outside when roasted. However, you can also use red or white potatoes if you prefer a creamier texture. Ultimately, the type of potato you choose will depend on your personal preference and the recipe you are using.

How to store leftover potatoes?

Storing leftover potatoes is easy. First, make sure they are cooled down to room temperature. Then, place them in an airtight container or resealable plastic bag and store them in the refrigerator. Leftover mashed potatoes can be stored in the same way or frozen for later use. When reheating, add a little bit of milk or butter to keep them moist. Avoid leaving cooked potatoes at room temperature for more than two hours to prevent the growth of bacteria.

FAQs

How do you not burn garlic when roasting potatoes? ›

Pre-Cook Your Garlic and Herbs

This is a little bonus tip for those who like to add aromatics (we love rosemary and garlic) to roasted potatoes. To avoid ending up with a burnt-on garlic flavor, sauté minced garlic with herbs just until it starts to take on a golden color.

Is it better to boil potatoes before roasting? ›

In most potato recipes, I recommend starting potatoes in cold water and bringing them up to a boil. This helps ensure that the exteriors don't turn to mush before the insides have a chance to cook through.

Why are my roast potatoes never crispy? ›

Just as overcrowding bacon or mushrooms in a saucepan causes disappointingly mushy results, placing potatoes too close to each other on a baking sheet will prevent them from crisping while they roast. Ovens are like saunas, blasting potatoes with dry, hot air.

How does Gordon Ramsay make the best roast potatoes? ›

In a video online, Gordon explained: “For crispy roast potatoes, you can depend on them, my tip is to parboil them, leave them to steam dry, then sprinkle them with semolina or flour, and then give them a good roughing up.”

What neutralizes garlic burn? ›

Treatment involves the application of anti-inflammatory agents like topical corticosteroids, with oral antibiotics if there is a superadded bacterial infection. Severe reactions often need to be managed by oral corticosteroids. Resolution is usually noted within 2 weeks.

Why should you not burn garlic? ›

The worst part about burning the garlic is that there is no way to undo the damage. Burnt garlic is useless and must be discarded. Not only is there a funky smell but there's more work to do in peeling and chopping fresh garlic (all the while with figurative egg on your face from the fail).

What happens if you don't soak potatoes before roasting? ›

Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes.

What oil is best for cooking roast potatoes? ›

Neutral, low-cost oil such as vegetable oil, canola oil, safflower oil, peanut oil, corn oil, coconut oil, avocado oil, etc., work well for roasting. These oils have a high smoke point, allowing the potatoes to get very hot to achieve maximum crispiness.

Why put flour on roast potatoes? ›

Roast for 1hr until golden and crisp, and don't forget to turn them occasionally to ensure they cook evenly. Here's a few tricks to try to make them even more delicious. Sprinkle your parboiled potatoes with flour. This gives potatoes extra crunch.

Should I dry potatoes before roasting? ›

To have a truly marvellous roast potato, one must simply let the potato dry completely after parboiling, before roasting in extremely hot fat. If you have two ovens you can cook them separately to your roast at a different temperature.

Why aren't my roast potatoes golden? ›

A baked potato needs to be cooked for at least 45 minutes to an hour at a high temperature (around 400-425 degrees Fahrenheit) to become crispy on the outside. You might not be using enough oil. If you're not using enough oil to coat the potato, it won't get crispy as it bakes.

Why are my roasted potatoes gummy? ›

Using Foil -

Foil traps the moisture in the potato causing the skin to be wet and the inside flavorless or gummy. Potatoes are made up of about 80% water, so sealing it up in foil does not allow enough water to escape, making it soggy.

How do you roast potatoes Bobby Flay? ›

Directions
  1. Preheat the oven to 425 degrees F.
  2. Toss the potatoes with the canola oil, garlic paste and salt and pepper to taste. Place on a sheet tray and roast until cooked through and golden brown, 25 to 30 minutes.
  3. Remove from the oven and immediately fold in the herbs.

Which fat is best for roasting potatoes? ›

Goose fat is one of the first choices for roast potatoes because first of all – it tastes nice! It has a really rich flavour compared to your more common vegetable oils. It's a bit like how cooking your roast potatoes in dripping from your turkey can add more flavour to your spuds too – they're both animal fats.

What potatoes does Jamie Oliver use for roasting? ›

“When it comes to the perfect roasties, I always start with Maris Pipers.

How do you roast vegetables without burning garlic? ›

For the garlic, use smashed whole cloves instead of minced so it won't burn. Finally, roast in a moderate rather than hot oven so the vegetables have time to sweeten and caramelise evenly!

Why does my roasted garlic burn? ›

Higher oven temperatures can cause the outer edges of the exposed garlic cloves to burn before the middles have time to soften, leaving you with a roast of uneven cloves, where the outsides are crispy and overcooked but the middle is still raw.

How do you keep potatoes from burning? ›

Try and use oil and fats sparingly as they act as fuel for the fire. Additionally, par cooking potatoes can mitigate the amount of time the potatoes are on the grill which can lessen the chances of the outside of the potatoes burning before the inside cooks.
