Why This Recipe Works

  • Scallops are one of the easiest kinds of seafood to cook and they can be ready in minutes.
  • These perfectly seared scallops are golden brown on the surface and sweet and silky on the insides.
  • For this recipe, we use sea scallops which are much larger than bay scallops. A few sea scallops go a long way!

How To Buy, Clean, and Cook Scallops

Scallops are often a special treat when dining out, but when you discover how incredibly easy scallops are to cook at home, you won’t have to wait to enjoy them again.

Buying Scallops:Buy the freshest scallops you can find. Be sure to purchase scallops from a reputable fishmonger. You will likely find fresh scallops in the seafood section of your grocery store.

Look for scallops that are a uniform pearly white color with firm, slightly moist flesh. They should not be completely dry or dripping with liquid. Make sure they do not look shredded or disfigured, this shows that they were not handled well and can sometimes indicate a lack of freshness.

Cleaning Scallops:Scallops are very easy to prepare for cooking. I usually just rinse them under cool running water and pat them dry with a paper towel.

Cooking Scallops:Scallops cook very quickly and can become tough and chewy if overcooked. Our favorite way to prepare scallops is to simply cook the scallops in a little olive oil in a skillet over medium-high heat. This is called “searing the scallops” and will give them a golden crust and are just barely cooked through. They’ll melt in your mouth!

Wet vs. Dry Scallops

When shopping for scallops, look for“dry packed” scallops. These have been shucked and shipped packed on ice, with no chemical additives. They tend to have a slightly pink or off-white hue and their flavor is more pure and concentrated. They have a shorter shelf-life but they are also fresher when you buy them.

Wet scallopsgo into a container filled with cold water and a phosphate solution after they are shucked. This preserves the scallops but also causes them to absorb water and plump up, giving them a less pure flavor and a tougher texture. These types of scallops tend to release a lot of liquid when cooked which causes them to steam rather than sear to a nice caramelized crust.

How To Know Whether You’re Buying Wet Or Dry Scallops

Sometimes it can be hard to tell whether the scallops you’re looking at are wet or dry. The best way to find out is to ask.

Are Wet Scallops Okay To Use?

Absolutely, especially if you’re going to be cooking them right away. My preference is to use dry scallops but wet scallops are delicious too.

How To Make This Recipe

  1. Grate 1 tablespoon of orange zest, then juice the oranges and the lemon into a bowl.

  2. Sprinkle the sugar in a skillet and cook over medium-high heat until dark amber, about 5 minutes. Remove from the heat and whisk in the vinegar, citrus juices, zest, and the coriander.

  3. Return to medium-heat and boil until thick, stirring, about 5 minutes (If the sugar hardens, it will dissolve as the sauce heats and thickens).

  4. Remove pan from the heat and whisk in the butter. Cover the pan and set aside.

  5. Season the scallops on one side with salt and pepper. Heat oil in a large skillet over medium heat. Add the scallops seasoned-side down and sear until golden, 4 to 5 minutes.

  6. Flip and cook until golden on the other side 3 to 4 minutes.

Expert Tips

  • Make sure your skillet is hot before adding the scallops to the pan.
  • Don’t overcrowd the scallops in the pan.
  • Do not move or touch the scallops until you are ready to flip them.

FAQs

What is the orange thing on scallops? ›

Since the nouvelle cuisine movement of the 1980s, chefs have increasingly been removing that orange, crescent-shaped organ. The roe is tasty, actually tastier than the scallop adductor muscle – the round white bit. Saucer scallops are most often sold without the roe.

Why do you soak scallops in milk before cooking? ›

When scallops are soaked in milk, lactic acid tenderizes the meat, resulting in a more delicate and succulent texture. The milk helps to break down the muscle fibers, making the scallops more tender and enjoyable to eat. This tenderizing effect is particularly beneficial if you cook larger and thicker scallops.

What not to do when cooking scallops? ›

Overcooking Your Scallops

With scallops, the (ahem) stakes are higher. Not only are they an expensive ingredient, but they cook very quickly. Worse yet, over-cooking leaves them dry and rubbery, rather than tender and sweet, and their size and shape make them impractical candidates for an instant-read thermometer.

Should you rinse scallops before searing? ›

Give your scallops a quick rinse to remove any grit, then thoroughly pat dry with a few paper towels, as excess moisture will inhibit searing. For added insurance, you can dry your scallops in the fridge for an hour or two before cooking.

Why are scallops sometimes orange? ›

According to Dana, “orange meat is caused by an excess of a natural pigment called zeaxanthin in a female scallop. As the gonad ripens and takes on an orange hue, any overabundance of this pigment is transported into the adductor muscle [the part of the scallop we eat].

What is the difference between white and orange scallops? ›

In male scallops, the gland is grayish white and hence the muscle remains white. Female scallops turn pink only when they're spawning; during this period, their glands fill with orange roe and turn bright coral, giving the adductor muscle a rosy hue.

Why do you have to wash scallops for 10 minutes? ›

Make sure you wash in free running water for at least 10 minutes after shucking, rinsing & trimming to ensure all toxins are effectively removed.

Do I need to purge scallops? ›

If you have whole scallops on the shell, or directly off them, remove the tough membrane, black intestinal thread and other organs surrounding the adductor muscle, without damaging the coral. Undercook rather than overcook. Scallops are regularly served rare and it is safe to do so.

Should you rinse fish after soaking in milk? ›

Online research had recommended letting the fish soak submerged in milk for around 20 minutes, before rinsing and cooking in your preferred fashion.

What is the secret to perfect scallops? ›

The secret is that you just pat them dry (buy dry-packed scallops), season with salt and pepper, and put them in a hot pan coated with oil and you leave them alone. Don't touch them. Don't move them.

How many scallops per person for dinner? ›

Scallops can be expensive and don't reheat well, so budget for the exact amount you need. We generally count 3–4 large scallops per person. Like shrimp, scallops vary in size; many stores will provide a count per pound, which you can use to estimate how many scallops you'll need.

Are scallops better grilled or sauteed? ›

Pan seared scallops are largely heralded as the best way to cook scallops. This method of cooking scallops features a skillet with some butter or oil over medium high heat.

Should scallops be at room temperature before frying? ›

Let scallops sit at room temperature for 10 minutes while towels absorb moisture. 2. Sprinkle scallops on both sides with salt and pepper. Heat 1 tablespoon oil in 12‑inch nonstick skillet over high heat until just smoking.

Do you remove the orange part of scallops? ›

Discard the attached muscle, skirt and black stomach sack. Inside, you will also find a vivid orange roe (also called coral), which is often discarded but is actually edible. Rinse (don't drench) several times in cold water to remove sand or grit.

Do you cook scallops on high or low heat? ›

After searing a few batches, we determined that scallops are perfectly cooked when their centers reach 115 degrees. Because scallops are so small and are usually cooked over high heat, carryover cooking will add another 10 to 15 degrees, for an ideal final temperature of 125 to 130 degrees.

Is it okay to eat an orange scallop? ›

It looks like a thick coin and it's white with just a hint of pink. But you'll also find darker orange scallops that are perfectly edible.

What to do with the roe from scallops? ›

The roe emulsion is as easy to make as mayonnaise, but instead of using egg yolks we use roe. In a blender blitz the roe with the lemon juice, mustard and lightly emulsify with the remaining 150ml of rapeseed oil. Season and keep in the fridge for later.

Do you eat the yellow bit of a scallop? ›

The scallop has three parts that are edible inside the shell: the white fleshy adductor muscle; the bright orange soft "coral" or roe; and the frilly membrane, which is often overlooked.
