These snicker dates are stuffed with creamy peanut butter and get dipped in chocolate. Add some chopped nuts to the top or coarse sea salt for garnish.
Dates stuffed with peanut butter are one of my favorite snacks lately and also one of Tiktok’s favorite snack. They're so good and make the perfect sweet/salty snack. If you don’t like the taste of plain dates you might like these chocolate-covered ones stuffed with peanut butter.
Dates are very nutritious and low on the glycemic index. They will not raise your blood sugar levels even when there’s peanut butter inside them. Dates also contain a lot of fiber and potassium.

What Ingredients do I need?
Medjool Dates - Medjool dates are a type of large, sweet, and chewy date fruit. They are often referred to as the "king of dates" due to their rich flavor and soft texture. Medjool dates are a good source of fiber, potassium, and other essential nutrients.
Peanut Butter - Use good peanut butter that is just ground-up peanuts and no other ingredients added to it. Costco’s Kirland’s brand is really good for this.Can always sub PB2 to make it lower points.
Chocolate - semi-sweet, milk chocolate or whatever type of melting chocolate you prefer
Nuts or coarse sea salt - for topping

How to make Chocolate Covered Dates
Step 1: Line a baking sheet with parchment paper.Stuff each date with about a teaspoon of peanut butter. Place them in the fridge to set for 30 minutes.
Step 2: Melt chocolate with coconut oil in a microwave-safe bowl for 1 to 3 minutes. Check occasionally and stir every 30 seconds until it’s all melted.
Step 3: Dip the stuffed date in the chocolate and rotate it around with a fork so that the date gets completely covered with chocolate. Then tap it on the side of the bowl to get rid of excess chocolate.
Place the date on the parchment paper and garnish with coarse sea salt or chopped peanuts.

- 8 oz milk chocolate or semi-sweet chocolate
- 12 pitted Medjool dates
- ½ cup of softened peanut butter
- 4 tablespoons of finely chopped walnuts or peanuts
- 1 tsp coconut oil
Instructions
