Our Crock Pot Squash Au Gratin is a savory cheesy low carb side dish easy enough for weeknight dinner but also delicious enough for a holiday meal!

I am always thrilled to find a yummy low carb side dish to add to our Low Carb Recipe Library. This Crock Pot Squash Au Gratin recipe is an adaptation of an oven recipe I found in one of my favorite low carb cookbooks: Keto Gatherings (I seriously LOVE that cookbook!) This side has all the cheesy goodness you’d expect from an au gratin recipe with a savory flavor that is out of this world. Low carbers and carb lovers alike will love this dish!

Notes on Crock Pot Squash Au Gratin
- This recipe is adapted from an oven recipe found in one of our favorite low carb cookbooks: Keto Gatherings.
- We used our casserole crock pot to make this, however you can make it in any traditional 6 quart slow cooker as well.

Crock Pot Squash Au Gratin (Low Carb)
Our Crock Pot Squash Au Gratin is a savory cheesy low carb side dish easy enough for weeknight dinner but also delicious enough for a holiday meal!

Ingredients
- 1/4 cup butter melted
- 1 tablespoon minced garlic
- 1 medium zucchini sliced thin
- 1 medium squash sliced thin
- salt & pepper to taste
- 1/2 cup mayo
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 3/4 cup pork rinds crushed finely
Instructions
Pour butter into the bottom of a casserole crock or 6 quart traditional slow cooker.
Sprinkle garlic evenly over the butter.
In a bowl, mix together mayo, sour cream, 1/2 cup of the cheese, pork rinds, squash and zucchini.
Pour mixture over top of butter and spread out evenly.
Top with remaining cheese.
Cook on high for 3-4 hours or until squash is tender and edges are golden.

I have been meaning to comment on this recipe for a while. I have made this probably a dozen times and it’s amazing. My husband is not a fan of squash (I know, right??) but he scarfs this down and actually requests it! We make it a lot in the summer to go with our grilled meats. It really keeps the house from heating up. Thanks a million for this! Winner for sure!!

I found your recipe via Pinterest…and it was a hit for our family gathering! That being said, I have to tell you that the BEST part about this is your video. I NEVER (like, EVER) watch recipe videos but I wanted to “see” how much squash to use. I ended up watching the whole 15 mins. Loved it! You have a new follower here!Reply

I’m not sure what to suggest. It is so good with the pork rinds I haven’t tried it any other way.

I’d like to try this recipe using my oven instead of a slow cooker… what do you suggest for baking time and temperature? I don’t want the squash to be mushy!

Absolutely delicious-didn’t have yellow squash, so used butternut with zucchini! Will use 1/4 c butter or less instead of 1/2 c next time!

This looks simply amazing!! I am a huge fan of yellow squash, it’s a must have when my husband plants our garden!! I noticed in the written recipe it says to sprinkle the garlic over the butter and in the video Mikey mixes it in with other ingredients…does it really make much difference? From the MMMMM and the clean plate…I’m guessing not!! 🤣 Pinning this and look forward to making it. Do you think it would be just as good with all yellow squash? I truly Love you guys…you are a great family and your recipes are so GOODe!!💖💖

Hey Kim! You can definitely use all yellow squash if you prefer. I typically prefer to put the butter in the bottom of the dish to help keep things from sticking and it makes the sauce a bit thicker… but Mikey doesn’t always follow my directions- ha! But either way it is super yummy!! Enjoy!
